If you are a big fan of salads like my family is, you’ll love what I have for you today. I’m sharing one of our favorite recipes. It’s a Tomato Pasta Salad. It is one of the best I’ve ever tasted. The recipe was pretty much perfect when I found it on Food Network’s site, but I’ve adapted it to make it more user-friendly for my husband’s tastes.
My husband likes when I use the cherry tomatoes, especially with this Gluten-free Tomato Pasta Salad. It’s not so much the tomatoes he doesn’t like, but all the seeds and the extra moisture. Using regular tomatoes in this recipe seems to dilute the flavors of the sun-dried tomato and make it too runny. The cherry tomatoes are a great alternative, and we always have some left over to snack on.

Gluten-free Tomato Pasta Salad
This is a delicious gluten-free pasta salad you can enjoy all summer long.
Ingredients for Salad
½ lb organic gluten-free fusilli pasta
½ pint organic cherry tomatoes, halved
¾ C kalamata olives, pitted and diced
5 sun-dried tomatoes in oil, drained and diced
3 oz. Havarti cheese, cut into squares
Ingredients for Dressing
½ tsp kosher salt
¾ tsp pepper
1 T red wine vinegar
6 T good extra virgin olive oil
½ tsp diced garlic
1 tsp capers, drained
5 sun-dried tomatoes in oil, drained
¾ C organic parsley, chopped
1 C parmesan cheese, grated
Directions for Gluten-free pasta
Cook the pasta according to package instructions. Drain well and allow to cool. Place pasta in a bowl and add the above ingredients.
Directions for dressing
Combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt and pepper in a food processor until almost smooth. Pour over pasta, combining all ingredients together. Add parsley and Parmesan cheese, stir. Chill and serve.
This is a great recipe for large parties. It is easy to double and it is always a crowd pleaser.
